Making Changes in the Kitchen

Last week I joined a group of six other women in a quest to loose 20 pounds. After deciding to participate I quickly realized that I really don’t have any “healthy” recipes in my cooking arsenal. When I do cook (insert husbands laughter here) my meals are more likely to fall into the “comfort” category.

Cooking this week has been a challenge- one night I literally stared into the cupboard for 20 minutes before giving up. So I need your help. When I do cook I want to cook things that are better for my family and that will help me in my quest to loose weight.

What are your favorite recipes? What books would you recommend I pick up (Someone told me to pick up Skinny Bitch??)? What web sites do you use to find healthy meals for your family?

Here is a recipe from Weight Watchers that my friend Amy from AmyinOhio gave me that I can’t wait to try.

Tomato, Basil and Smoked Mozzarella Pasta Salad

8 oz uncooked fusilli, or other spiral pasta
1 Tbsp balsamic vinegar, or more to taste
2 tsp olive oil
1/2 tsp dried oregano
1 cup cherry tomato(es), or grape tomatoes, halved
1/2 cup basil, fresh, chopped
1/2 cup part-skim mozzarella cheese, smoked, diced
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Instructions
Cook pasta according to package directions; drain and transfer to a large bowl. Add vinegar, oil and oregano; toss to coat.

Fold in tomatoes, basil and mozzarella; season to taste with salt and pepper. Serve warm or chilled. Yields about 1 cup per serving.

Notes: For added flavor, add sun-dried tomatoes to this recipe. Place 1/4 cup of dried sun-dried tomatoes in a bowl and cover them with boiling water; set aside for 10 minutes to allow the tomatoes to plump up. Drain well and substitute them for half the cherry tomatoes in the recipe.


Responsibility Project

The great folks at Liberty Mutual have launched something that is really near and dear to my heart.

It’s called The Responsibility Project .

It is a project geared to the idea of taking responsibility for making your little bit of the world a better place.

Paying it fore ward .

Standing up to make this a better world,one good deed at a time.

I love the idea.

We all have been caught in moments when just one small act on our part would have made things better for someone.

Weather its handing an umbrella to a woman caught in the rain or being a bit nicer to the shy odd child at school.

We’ve all had moments,chances,to make our little corners better places.

Here is my Responsibility Project story.

A few years ago my family and I were living on an Army Post in Germany.

Our eldest son got very sick out of the blue and passed away the next day.

We were crushed,lost and alone in the world with our grief.

Or so we thought.

There we were sitting in our now too empty home,not knowing what to do ,where to go ,or how to take care of the final needs of our wondrous and beautiful little boy,when a knock at the door came.

There standing in front of us were dozens of soldiers and strangers.They had heard about Nathans death and had decided to take responsibility for helping our little family any way they could.

Most of these folks didn’t even know us.

That didn’t matter to them.

They saw a family in pain,in need and didn’t even think about it.They just acted.

Together they raised the money for Nathan and the rest of us to be flown back to America so our baby boy (he was about to turn two) could be buried with love and dignity on his native soil.

They handled every detail from finding homes for our 2 pets to finding clothes for us to travel in.

These were family men and women with little of their own but they gave what they had from their hearts because they all felt that we have a responsibility to our fellow folks to help when we can ,in any small way.

We were so touched and over whelmed .

We asked”what can we possibly do to repay you all for this gift?”

You know what they said?

“When you see someone in need be the hand that helps.”

That is what we have tried to be from that day fore ward and that is what The Responsibility Project is all about.

Take a moment with your child and visit the site.Learn together what you can do to take responsibility for making your little corner a better place to be.

If enough of us do,there wont be any corners left where people turn blind eyes,where no candle is offered in the darkness.

We will be hands out and hands up to both friend and stranger alike,and that is worth teaching our children.

When its more than just Diaper Rash

When my daughter was a baby she would come down with terrible diaper rash.

Oh No He Didn’t!
