Mouthwatering Monday – Pulled Pork BBQ

Photobucket

Happy Mouthwatering Monday!!

I know I’ve been absent from MM the last two weeks, but to make up for it, I am sharing one heck of a BBQ recipe!  Last week my husband made the most amazing pulled pork BBQ sandwiches and I am here to share the BBQ love with you! Special shout out to the husband for making this amazing meal!

INGREDIENTS:
1 boneless pork shoulder roast, about 2 1/2 to 3 pounds
2 Tablespoons Yellow Mustard
1 Teaspoon each, Salt & Pepper
3 Tablespoons Brown Sugar
2 teaspoons Southwest seasoning
1 1/2 Cups Apple Juice
1/4 Cup Apple Cider Vinegar
Package of Hamburger Buns

PREPARATION:
Combine yellow mustard, salt & pepper, brown sugar, and southwest seasoning to make rub.  Once mixed coat pork shoulder with mixture.  Pour apple juice in bottom of roasting pan. Place pork shoulder on top of rack inserted in pan. (This will prevent the meat from sitting in juices as well as from over cooking.)  Lightly drizzle apple cider vinegar over pork shoulder, cover and place  in oven at 225for about 10 hours.   Once it is finished cooking (it will be falling apart in the pan), shred pork and add your favorite BBQ sauce.  Serve on hamburger buns with your favorite sides!
