Menu Plan Monday – Use It or Lose It Edition

Menu Plan Monday

Happy Menu Plan Monday!

It’s the last week of the month and that means making sure I finish up all the meals I prepared doing Once a Month Mom’s cooking plan for the month of April. We’ve done pretty well so far, eating most of the dishes.  We just need to eat a few more so we’ll have room for next month’s batch of meals. If you’d like to check out any of these recipes, head over to Once A Month Mom. You’ll find them, here. Keep in mind the recipes will need to be adjusted for traditional portions.

  • Monday – Spaghetti with meatballs
  • Tuesday — Shrimp with roasted red peppers and fetta
  • Wednesday – Grilled chicken with black beans and rice
  • Thursday — Stouffers lasagne w/ salad
  • Friday — Grilled chicken over angel hair pasta
  • Saturday — Stouffers lasagne w/veggies
  • Sunday – *Sandwiches w/ spinach and cheese tortillini soup

* This is the day that Amy and I will be doing our Once a Month Cooking for the month of May.

I Marched for Maddie

Yesterday, along with Kathi, Diana, Kelly, Liz, Tela and Amy (and a couple of spouses and Kids) I participated in the March of Dimes, March for Babies walk at Sawyer Point.

We walked for Maddie, a precious little girl who passed away on April 7 from respiratory complications.  Our team was one of many across the country walking in the sweet little girls memory.  You can read more about Maddie, here.

If you’d like to show your support to Heather and Mike, you can still March for Maddie in the March of Dime’s March for Babies walk in a lot of states. You can find a list of teams acrouss the county on Sarcastic Mom’s site, here.
