Mouthwatering Monday – Easy White Chicken Chili
INGREDIENTS
3 Chicken Breasts, Cubed
1 Packet McCormick White Chicken Chili Seasoning
4 oz Diced Green Chilies
3 Cups Chicken Broth
15 oz Can of White Beans
15 oz Can of Black Beans
Medium Onion, Diced
1 Tablespoon Vegetable Oil
Salt & Pepper
Shredded Cheese
PREPARATION
In a large sauce pan, combine vegetable oil and diced onions. Cook until onions begin to soften. Add in diced chicken, chicken broth, McCormick seasoning, navy beans, black beans and green chilies. Let simmer for 15 minutes. Salt & pepper to taste. Serve with shredded cheese as a garnish.

I love white chicken chili! Yum! I’ve never tried putting black beans in but we love them so I might have to try it. To thicken mine into more of a chili consistency, I use another can of white beans and puree them and add them into the broth.

This sounded so good that I’ve got it simmering on the stove right now. I didn’t do the black beans and I shredded the chicken because that’s how I prefer it. I’m going to freeze some individual portions to have on hand after baby gets here within a couple of weeks. Thanks for the idea!
