Planning Our Week (in Food)

It’s been a long time since I planned out our dinners for the week, but I’ve finally made the time to work on it.  With school starting back and kids activities Monday, Tuesday, Wednesday and Saturday, things have been quite hectic around here.  Here’s what I hope to serve this week… we’ll see how it goes ;-) ~

MondayGrilled Tuna with broccoli rice casserole and cinnamon apples

Tuesday - Pizza Croissants (courtesy of Tricia at Once A Month Mom), Corn on the Cob and fruit cup of some sorts

Wednesday - Lasagna (Stouffers lasagna is on sale this week), salad and garlic bread

Thursday – Taco Night! Soft tacos, Spanish rice and veggies

Friday - Grilled Lime Chicken Kabobs (Thanks Paula Deen!); black beans w/ rice and Yogurt parfaits.

Saturday - TBD (probably left overs)

Sunday – TBD (probably a pasta dish like my Mexican Pasta Bake)

Happy Menu Plan Monday!

It’s the last week of the month and that means making sure I finish up all the meals I prepared doing Once a Month Mom’s cooking plan for the month of April. We’ve done pretty well so far, eating most of the dishes.  We just need to eat a few more so we’ll have room for next month’s batch of meals.   • Monday – Spaghetti with meatballs
  • Tuesday — Shrimp with roasted red peppers and fetta
  • Wednesday – Grilled chicken with black beans and rice
  • Thursday — Stouffers lasagne w/ salad
  • Friday — Grilled chicken over angel hair pasta
  • Saturday — Stouffers lasagne w/veggies
  • Sunday – *Sandwiches w/ spinach and cheese tortillini soup

* This is the day that Amy and I will be doing our Once a Month Cooking for the month of May.


Intro to Meal Planning

Alright, here we go. My first real menu plan and my first time participating in Organizing Junkie’s Menu Plan Monday. I have to say that I really enjoyed sitting down this morning before going to the grocery store and planning out what I was going to make this week.  I couldn’t believe how much EASIER it made grocery shopping.  Instead of just randomly buying things that “sounded good” I was being strategic!  It was insane.  This week I decided to go the vegetarian route.  Some of these are new recipes for me so I’ll be sure to let you know which worked and which didn’t (hopefully they’ll all be tasty!).

Monday - Fruit Plate (Boys have soccer, I have a late meeting)
Tuesday-Black Beans & Rice: Brown rice, black beans, corn, tomatoes, onion, shallot & avocado
Wednesday- Veggie Wraps: Whole wheat wraps, hummus, gr. pepper, tomato, lettuce, cucumber & avocado
Thursday-  Soup: Diced tomatoes, onions, potatoes, corn, celery, tomato paste and veggie broth
Friday- Date Night – Boys having Grilled Cheese & Veggie Soup, Fruit Cup.
Saturday – Veggie Tacos: Whole wheat tortillas, vegetarian “meat” crumbles, tomato, avocado, lettuce, corn & salsa.
Sunday – Pasta Dish: Whole wheat pasta, garlic, olive oil, walnuts & craisins.
