<p id="top" />This week, <a href="http://www.faminecity.com" target="_blank"><strong>my husband Marty</strong></a> has generously offered to &#8220;guest post&#8221; and share his Southwest BBQ Pizza recipe with us for Mouthwatering Monday.  As you know, my husband is the head chef in our household &#8211; doing a majority of the creative (non meal in a box) cooking.  Today he&#8217;s sharing a recipe for a pizza that he made, not once, but twice this weekend. Sunday we had it for lunch, and it was so good we invited my parents over for dinner and Marty made it again!</p>

<p><strong>Marty&#8217;s Southwest BBQ Pizza</strong></p>

<p><strong><span style="text-decoration: underline;"><span style="color: #993300;">INGREDIENTS </span></span></strong><br />
Canned Corned-drained<br />
Canned Black Beans-drained<br />
Diced Onions<br />
Diced Tomatoes<br />
Shredded Cheese-for this I recommend the Monterrey Jack and Cheddar<br />
Smoked Jalapenos<br />
Optional: You could add chicken if you want<br />
BBQ Sauce: Use your favorite tomato based, vinegar wouldn&#8217;t work<br />
Olive Oil<br />
Pizza dough (see below for recipe)</p>
<p><strong><span style="text-decoration: underline;"><span style="color: #993300;">PIZZA DOUGH RECIPE, </span></span><em><span style="text-decoration: underline;"><span style="color: #993300;">compliments of Mario Batali &amp; Food Network </span></span></em></strong><br />
1 cup warm water<br />
3 tablespoons extra-virgin olive oil, plus more as needed<br />
2 teaspoons sugar<br />
1 1/2 teaspoons kosher salt<br />
3 cups all-purpose flour, plus more for kneading<br />
1 1/2 teaspoons active dry yeast</p>
<p><span><span style="text-decoration: underline;"><strong><span style="color: #993300;">DOUGH DIRECTIONS </span></strong></span><br style="text-decoration: underline;" /><em>You can make the dough by hand, or you can take a short cut here. </em></span></p>
<p>To make the dough: Simply add flour and yeast with the dough attachment in the Kitchen Aid Mixer. Stir for a couple moments. Next, add the rest of the ingredients into the warm water. Now turn on the Kitchen Aid on 2. Then add all of the wet ingredients slowly pouring it in over the course of about 15-20 seconds. Now, let it go for 3-4 minutes. You&#8217;ll see the dough pretty much pick up all of the ingredients and become a large ball. Take it out of the mixer, and break it into a 3-4 balls of dough (4 roughly make four 12-inch pizzas). Drop it onto some wax paper and let it rise at room temp for about 45-minutes. Freeze or stick in the fridge if you want to store it for a few days.</p>
<p>Now that you have created your pizza dough, roll it out to your desired thickness. I recommend a very thin crust. I actually prefer a non-standard round presentation. I think it makes it look a bit more authentic.</p>
<p><strong><span style="text-decoration: underline;"><span style="color: #993300;">PIZZA DIRECTIOINS </span></span></strong><br />
On the top of the rolled out pizza dough, brush a super light coating of olive oil on the crust. Paint BBQ sauce across the pizza dough. You want to cover the pizza dough, but you don&#8217;t want a really think coating of BBQ sauce. You want it to cover lightly. After you&#8217;ve created your base, spread the toppings of corn, tomatoes black beans, onions, jalapenos (optional) and top with cheese. It&#8217;s really important that you make sure that your toppings have been drained.</p>
<p>Ovens differ. I bake in our convection for about 8-10 minutes at 375, open the door slightly to keep the over rising in temp from the bottom and then throw it under the broiler for a 2-3 more minutes. I keep an<br />
eye on it during this time because I want the crust under to be done, the top of the pizza to be browned nicely.</p>
